Анотація
Improving the quality of food products and their organoleptic characteristics is the main task of the food industry. It is with the aim of giving food a pleasant smell, taste,
and attractive appearance that chemicals classified as food
additives are widely used. Even though these compounds are used
only in safe dosages, the results of several scientific studies show
that even in this case, chemicals can cause morphological
changes in internal organs with subsequent disruption of their
functioning. In addition, the negative impact of food chemical
additives can be exacerbated by the simultaneous use of more
than one additive, which is a fairly common practice among food
companies. The conducted literature search showed that the
number of studies assessing the impact of food additives on the
ileum is limited and requires further study.
Опис
The study was conducted on 70
sexually mature white rats kept in standard conditions of the
vivarium of Poltava State Medical University. The experimental
animals were divided into control and experimental groups
depending on the period of administration of the experimental solution (1 week, 4 weeks, 8 weeks, 12 weeks, 16 weeks, and 20
weeks). Each group consisted of 10 rats. The control group was
administered saline once orally, and the experimental group
received a solution prepared at the rate of 20 mg/kg of monoso dium glutamate, 5 mg/kg of Ponceau 4R, and 0.6 mg/kg of
sodium nitrite in 0.5 ml of distilled water for the appropriate
period. At the end of each study stage, the experimental animals
were withdrawn from the experiment by an overdose of sodium
thiopental. After that, experimental material was collected.
Biopsies of the ileum were paraffin-embedded, and sections were
made using conventional methods. The obtained histological
specimens were stained with hematoxylin and eosin, according to
Hart and Van Gieson, and further studied using a light
microscope with a digital microphotographic attachment. In each
series of specimens, the diameter of the arteriolar lumen of the
ileal submucosa was evaluated. The statistical indicators were
processsed in the InStat software package. The difference was
considered significant at p<0.05. In conducting the study, we
were guided by the provisions of the European Convention for
the Protection of Vertebrate Animals Used for Experimental and
Other Scientific Purposes (Strasbourg, 1986).
